2005 Napa Valley Cabernet Sauvignon

This mature, well-built Napa Valley Cabernet is a luscious, deep brick-red color. Ripe black-cherry flavors and a cassis core, are nicely integrated with sappy French oak tannins. These firm, yet resolved tannins are supple, silky and elegant on the finish, allowing for both short-term enjoyment, or a long term reward, when cellared.

This wine pairs well with petite filet mignon grilled over mesquite and served with a sun dried tomato confit seasoned with fresh marjoram and sea salt or accompanied by soft polenta made with Mascarpone and finished with Reggiano Parmesan and fresh cracked pepper.

My objective was to make a serious, well structured and age-worthy Cab, while refining it with a soft touch so as to make it approachable in it's youth. To do so I looked for hillside fruit from low producing vines within the Napa Valley. The low yields coupled with the additional hang-time allowed me to make a very concentrated cuvee which I then backed with ample French oak. In order to achieve balance and integration with the oak I aged in barrel for 24 months which effectively softened the tannins over this time period.

While this wine will benefit from extended aging in bottle; it's resolved tannins and sappy core is a welcomed addition to the luxury category at a truly affordable pricepoint.
