Winemaker
Position Summary
The Winemaker independently and as part of a team manages and coordinates all aspects of the Winemaking department to produce a well balanced portfolio of high quality, award winning wines for Don Sebastiani & Sons.
Primary Duties and Responsibilities:

Creates distinctive, high quality styles of wines, taking direction from Owner, Director of Operations and others.

Responsible for achieving desired wine flavor profiles.

Oversees all wine production with concentration on white wines.

Coordinates necessary blends and instructions to the Enologist and Cellar in order to properly execute blends and bottling.

Coordinates/participates in blending and tasting of bulk wines.

Establishes Harvest season winemaking standards (grape sugars/acids, processing, finishing, etc.).

Designates appropriate wines for selected programs.
-
Actively participates in crush, which requires an extended work schedule and requires overnight travel.

Works within the assigned budget and works with our finance team in order for programs to meet the appropriate designated price points.

Enters accurate data into Winemaker's Database (WMDB) to track bulk wine movements.

Participates in sourcing bulk wines and negotiating price and purchase agreements.

Develops and maintains bulk wine monthly reports to provide a clear view of inventory on hand.

Communicates effectively and maintains strong working relationships with team.

Manages large inventories of wine between multiple facilities.

Provides necessary information for production planning.

Actively participates in and abide by all HACCP and ISO programs as part of DSS compliance.

Perform special assignments, projects, and other duties as required.
Education/Experience/Skills:
-
Bachelor's degree in Enology, Viticulture, a related field or equivalent experience 2-4 years enology/winemaking experience.

Extensive knowledge of winemaking and different wine styles.
-
Understanding intricacies of winemaking and relationships with growers, clients, sales force and internal customers.

Experience with large volume producers is a plus.

Don & Sons is an Excel based company with a strong reporting and communications emphasis based on Excel spreadsheets. Proficient to advanced use of this program is a requirement.

Proficient on common software including Outlook, PowerPoint, etc.

Proficiency in Winemaker's Database highly desirable.

Working knowledge of data collection, data analysis, evaluation, and scientific method.

Prior experience at managing people.
Ability to speak and understand Spanish helpful.

Assistant Operations Manager
Position Summary
The Assistant Operations Manager, independently and as part of a team, manages and oversees all operations activities including bottling, maintenance, export distribution, scheduling and forecasting functions to ensure that all plant operations are performed in an efficient, safe and cost-effective manner consistent with established procedures.

Plans, organizes and directs production, administrative and warehouse activities to meet or exceed established production goals in a cost-effective manner.

Provide timely updates of all production planning documentation including bottling schedules and inventory updates.

Develops and manages all scheduling functions. Modifies and adapts production schedules to accommodate revisions, cancellations or priorities.

Works with all appropriate departments/staff in schedule creation and updates.

Develops and implements processes that increase efficiency and/or improve quality of manufacturing.
-
Responsible for plant safety programs and ensuring that employees and managers have the required safety training and are working in a safe manner; develops and implements safety programs to reduce accidents and injuries.

Provides leadership, communication and coaching to employees; cultivates a motivated employee environment of trust, teamwork, accountability and self-confidence. Responsible for hiring, training, developing, evaluating, counseling and discipline of personnel.

Communicates effectively and forms strong working relationships with Winemaking team, Cellar, Lab and Director of Operations.

Monitors department budget and manages expenses within the assigned budget.

Actively participates in and abides by all HACCP and ISO programs.

Establishes and maintains all production and sanitation procedures

Perform special assignments, projects, and other duties as required.
Education/Experience/Skills
-
B.A. or B. S. degree + 4 or more years experience in related industry.
-
Experience in all phases of production -- bottling, packaging, scheduling is essential.
-
Knowledge and experience with quality control and plant certifications including HAACP and ISO9000.
-
Demonstrated skill in supervising and motivating subordinates.

Proven ability to handle multiple projects and meet deadlines.
